TINNED SEAFOOD
The fish we use in our tinned British seafood range comes direct from the fishermen and marine farmers working in bays and channels around the British coast. We buy the catch directly from the boats when it is in peak condition and preserve it to retain and develop the wonderful flavours of each specie. Tinned fish is incredibly versatile and ensures that 100% of the precious catch is used. That means no waste, increased value for the people who catch the fish and less pressure to catch more, allowing the fisheries to flourish for another day. Made using some of the best seafood in the world, landed in Britain, all our tinned fish is produced entirely by hand. That means the catching, when hauling nets or using hook and line, the cooking, skinning, filleting and hand-laying the fish into tins. BRITISH SEAFOOD PERFECTLY PRESERVED
Our tinned seafood project started off as an experiment. We wanted to put a British twist on the conservas that are prized within small fishing communities of Spain and Portugal. We started with gorgeously buttery Mount’s Bay sardines which are caught sustainably off the coast of Cornwall. Quickly our experiment extended to Lyme Bay rope grown mussels, cuttlefish caught a skimming-stone’s throw from our Brixham restaurant as well as line caught Cornish mackerel. Each tin is prepared by hand, using artisanal methods. What started off as an experiment has now flourished to become something truly world class.
